Confession: I prefer pork chops with a bone. Usually, I skip right over the boneless pork chops, but on my last trip to the grocery store that was not possible. Why? Because they were on sale and so budget-friendly that I had to grab a few packs for the freezer. My determination to cook the thin-cut pork chops in a way that made me forget about the bone set it. This quick and easy skillet boneless pork chop recipe may have changed my mind a bit.
Boneless pork chops, especially when thin-cut, cook amazingly fast. That is a plus, but they can also overcook and are not a forgiving ingredient. The secret to this pork chop recipe is a screaming hot pan, quick cooking and liberal seasonings. From now on, I will not give the boneless pork chops shade. This is a budget high-protein recipe that will be on repeat.
To make these crisp and juicy boneless pork chops you will need the following ingredients: boneless pork chops (check out the health benefits of pork), smoked paprika, curry powder (read about the health benefits of curry powder), garlic powder, flour (all-purpose or gluten-free) and a high-heat cooking oil like canola, avocado or vegetable oil.
If you don't like the spices I selected for my pork chops, change them up! From dried Italian seasoning to barbecue rub to onion powder to garam masala to five spice powder, the combination and flavor profile is up to you. But do not use olive oil for this recipe because it has a lower smoking point. You want the oil hot before adding the quick-cooking pork chops.
Cooking Note: My pork chops were not that big or thick, so I got only two servings from four pork chops. If you chops are thicker and/or bigger, you could get more than two servings.
Serve the skillet pork chops as a high-protein dinner with your favorite side dishes.

Ingredients
- 4 boneless pork chops (I used thin-cut boneless pork chops)
- smoked paprika
- curry powder
- garlic powder
- 1/4 cup flour (all-purpose or gluten-free flour)
- 2 tablespoons cooking oil (high-smoke point oil, not olive oil)
Here's how to make it:
- Season the pork chops on both sides with salt and pepper, to taste, then sprinkle both sides with desired amount of smoked paprika, curry powder and garlic powder.
- Dust the seasoned pork chops in the flour. (For a gluten-free dinner, use gluten-free flour.)
- Heat the oil in a large skillet over medium-high heat. Once the oil is very hot, add the pork chops. Cook until golden on the bottom, about 2 to 5 minutes.
- Flip the pork chops over and continue to cook until cooked through, about 3 minutes more depending on the thickness of your chops. Pork is cooked through at 145 degrees F internal temperature on a food thermometer.
- Serve the pork chops immediately. (Pork dries out as it cools, especially thin-cut boneless pork chops.)
- Store any leftover pork chops in an airtight container.
