Sadly, Dad passed away a few months ago and, since then, I haven't been making as many cookie recipes as I had been before. So it was fun to make this high-protein peanut butter banana cookies recipe with chocolate chips. These are decadent chocolate chip cookies that you can feel good about feeding your family.
The easy peanut butter banana cookies are absolutely delicious. The protein comes from peanut butter and almond flour, which I've recently rediscovered as one of my favorite healthier ingredients. Almond flour is slightly sweet, with a nutty flavor that we love. It's a good source of plant-based protein and antioxidants, along with the many other health benefits of almond flour. It's naturally gluten-free and rich in monounsaturated fat, which may help control cholesterol.
This delicious peanut butter banana protein cookie recipe is incredibly simple to make. Ingredients
- 1/3 cup (about 1 small) overripe banana, mashed
- 1/3 cup peanut butter (creamy or chunky)
- 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
- 2 cups fine almond flour
- 1/2 cup semisweet chocolate chips
Here's how to make it:
- In a large mixing bowl, add the mashed bananas, peanut butter, maple syrup and vanilla. Stir to combine. (I used chunky peanut butter, but you could use creamy, if preferred.)
- Add the almond flour and stir to combine.
- Fold in the chocolate chips.
- Using your clean hands, form the dough into balls and place them about an inch apart onto nonstick or parchment paper-lined baking sheets. Using a fork, press down in a crisscross pattern to flatten the cookies a bit. (The cookies will generally stay the same shape and size as how they're formed. The number of cookies you get depends upon the size of the balls you form.)
- Bake in an oven that's been preheated to 350 degrees F until just turning lightly brown, about 12 minutes.
- Remove and allow cookies to cool a few minutes before moving to a wire rack to cool completely.
- Store leftover cookies in an airtight container (in the refrigerator lasts longer).
