Here is your shopping list for this quick and easy vegetarian white sauce recipe: button mushrooms, butter or olive oil, fresh garlic, fresh thyme, white wine, heavy cream, Parmesan cheese (read about the health benefits of Parmesan cheese) and broth (veggie or chicken). The sauce cooks up in about 10 minutes on the stovetop.

Cooking Tip: You can use regular ol' button mushrooms for this Parmesan sauce recipe. If you aren't worried about a budget-friendly recipe, you could use wild mushrooms or your favorite variety.

Ingredients

• 3 - 3 1/2 cups button mushrooms, sliced
• 1 tablespoon butter (or olive oil)
• 1 tablespoon garlic, finely chopped
• 1/2 teaspoon fresh thyme (or dried thyme)
• 1/2 cup dry white wine
• 1 cup heavy cream
• 1/2 cup Parmesan, freshly grated
• 1/2 - 1 cup broth (vegetable broth or chicken broth)

Here's how to make it: 

1. Heat the butter or olive oil in a saucepan over medium-high heat. Add the mushrooms and cook, stirring often, until golden brown and softened, about 5 minutes. Add the garlic and thyme and cook for 30 seconds. 
2. Add the wine and cook, stirring, until it reduces by half, about 3 minutes. 
3. Turn the heat to low. Add the heavy cream and Parmesan. Stir until cheese has melted and incorporated into the cream.
4. Add enough broth to reach your desired consistency. Start with 1/2 cup and add more if needed. Season the sauce with salt and black pepper. Serve as desired. Store any leftover sauce in an airtight container in the fridge.
