Ingredients 

• 1/2 cup flour (all-purpose or gluten-free flour)
• 1 cup granulated sugar (divided)
• 1 teaspoon baking powder
• 1/3 cup milk
• 1 egg
• 1/4 cup butter, melted
• 2 cups peaches, peeled, pitted and sliced 
• 1/2 teaspoon vanilla
• 1/2 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1/4 cup brown sugar (optional)

Here's how to make it: 

1. Whisk together the flour, 2/3 cup granulated sugar and baking powder in a mixing bowl. (For a gluten-free cobbler, use gluten-free flour.)
2. Add the milk and egg. Stir to combine. 
3. Put the melted butter into a deep pie plate. Pour the batter over the melted butter. Do not stir. (If you don't have a pie plate, use an 8x8-inch, 9x9-inch or similar size baking dish.)
4. Put the peaches into a mixing bowl and add 1/3 cup sugar, vanilla, cinnamon and nutmeg. Stir to combine. Pour the peaches over the batter. Do not stir.
5. Sprinkle the top with the brown sugar, if using.
6. Bake in a preheated 350-degree F oven for about 40 minutes, or until the top is golden.
7. Serve warm with vanilla ice cream on top. Store any leftovers covered in the fridge. This recipe can be doubled and baked in a 13x9-inch baking pan.
