You marinate the tomatoes in a mixture of olive oil, pesto and balsamic glaze. Next, you cook the chicken in olive oil and butter. Then, you top the chicken with fresh basil, tomatoes and mozzarella. For the Marinated Tomatoes
- 2 cups fresh tomatoes, sliced (about 2 medium tomatoes)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons prepared basil pesto (store-bought, or make your own pesto)
- 1 tablespoon balsamic glaze, plus additional for garnish
- 1/8 teaspoon kosher salt and black pepper (or to taste, to season the marinade)
For the Chicken
- 2 tablespoons extra virgin olive oil
- 2 tablespoons salted butter
- 2 pounds chicken cutlets
- 1 teaspoon kosher salt and black pepper (or to taste, to season the chicken)
- 10 - 15 fresh basil leaves, depending on size (enough to cover the chicken)
- 10 - 12 ounces fresh mozzarella cheese, sliced (enough to cover the chicken)
- additional fresh basil, for garnish (optional)
- drizzle of balsamic glaze, for garnish (optional)
Here's how to make it:
- In a medium mixing bowl, add the olive oil, pesto and balsamic glaze. Season with salt and pepper, if desired, then whisk to combine.
- Add the tomatoes and toss to combine. Set aside.
- In a cast iron or ovenproof skillet over medium-high heat, add the olive oil and butter and stir to combine. Season the chicken with salt and pepper, if desired, then add the chicken to the skillet.
- Cook the chicken until cooked through and golden, about 3 minutes per side. Remove from heat.
- Place the basil on top of the chicken, ensuring the basil leaves are evenly distributed and chicken is covered.
- Place the mozzarella slices on top of the basil, ensuring slices are evenly distributed and chicken is covered. Bake in an oven that's been preheated to 400 degrees F until mozzarella melts and everything is bubbling, about 10 minutes. (Alternatively, you could broil it for a few minutes instead.)
- Remove skillet from oven and allow to rest for a few minutes. Top chicken with the marinated tomatoes.
- Garnish with additional fresh basil leaves, if desired.
- Drizzle with additional balsamic glaze, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
