This super-tender braised chuck roast recipe with white beans is a deliciously different twist on the classic pot roast. Here is what you'll need to prepare this easy braised beef recipe for your family: a beef chuck roast, cooking oil, onion, beef broth, red wine (or more broth), Worcestershire sauce, fresh thyme, canned white beans (think cannellini or great northern) and optional fresh herbs for serving. This easy chuck roast recipe can also be made in the slow cooker. To cook the roast in a slow cooker, brown the meat in a skillet until seared on all sides. Place the meat into the slow cooker along with the broth, onion, red wine, Worcestershire sauce and thyme. Cover and cook on low for about four hours. Add the beans, cover and continue to cook another two to three hours, or until the roast if fork-tender.
Variation: You could add carrots or mushrooms to the easy dinner recipe.

Ingredients
- 1 chuck roast (about 3 pounds)
- 2 tablespoon cooking oil
- 1 onion, chopped
- 1 cup beef broth
- 1/4 cup red wine
- 2 tablespoons Worcestershire sauce
- 4 sprigs fresh thyme
- 15 - 30 ounces (1 to 2 cans) white beans, drained and rinsed
- fresh herbs, for serving (optional)
Here's how to make it:
- Season the chuck roast all over with salt and black pepper. Heat the cooking oil in a dutch oven or ovenproof skillet over medium-high heat. Brown the roast on all sides until well seared and browned. Remove the roast to a plate.
- Add the onion to the pan and cook for about 1 minute. Pour in the beef broth, red wine and Worcestershire sauce. Stir to remove any brown bits from the bottom of the pan. (If you don't like cooking with alcohol, you can add more beef broth.) Add the sprigs of thyme. (If you don't have fresh thyme, you could use 1/2 to 1 teaspoon dried thyme.)
- Put the roast back into the pan. Cover the pan with a lid and place in a preheated 325-degree F oven. Bake for 2 hours.
- Remove the pan from the oven and pour the can(s) of beans around the roast. Cover and bake about 1 hour more, or until the roast is fork-tender.
- Taste the beans and add more salt and pepper, if needed. Slice or shred the meat and serve with the beans. Garnish with fresh herbs, if desired. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
