I love sweet potatoes in any form, but I’m new to experimenting with Middle Eastern spices. These baked sweet potato fries with za’atar, paprika and cayenne have a smoky flavor that is addictive. My family loved these baked sweet potato fries spiced with paprika and za'atar. This is a wonderfully different sweet potato recipe!

This high-fiber recipe can be cooked in a conventional oven or air fryer. The sweet potato french fries are delicious dipped in ketchup or tzatziki for a wonderful change up to plain sweet potato fries. (Read about the health benefits of fiber.)

Here is your vegan, gluten-free shopping list for these za'atar-spiced sweet potatoes: sweet potatoes (check out the health benefits of sweet potatoes), extra-virgin olive oil, za'atar, sweet paprika, ground cayenne pepper and kosher salt.

Cooking Tips: Some people like to leave the peel on their sweet potatoes. If you prefer unpeeled sweet potatoes, leave it on! Instead of sweet paprika, you could use smoked paprika or regular ground paprika.

Ingredients

• 4 medium sweet potatoes, scrubbed, peeled and cut into wedges or thick slices
• 2 - 3 tablespoons extra virgin olive oil
• 2 teaspoons za’atar
• 1 1/2 teaspoons sweet paprika
• cayenne pepper, to taste (I used just a pinch)
• kosher salt, to taste

1. Optional step: To reduce the starch in your sweet potato place them in a large bowl and cover them with ice water. Leave to soak at room temperature for 30 minutes or overnight in the fridge. (Reducing starch allows sweet potatoes to crisp up better.)
2. Remove the fries to a clean kitchen towel and pat dry and dry the bowl. Add the fries back into the bowl and drizzle olive oil over the fries. You’ll want to add 2 to 3 tablespoons so they are all coated when you toss them. Mix your seasonings with a good pinch of salt in a small bowl. Sprinkle the fries with the seasoning and toss well to thoroughly coat.
3. Place the fries onto a parchment paper-lined baking sheet. (For the crispiest fries, leave space between them.) Bake in a preheated 425-degree F oven for 35 to 45 minutes, or until crispy, turning over at the halfway point.
4. Remove from the pan and sprinkle with more salt and seasonings, if desired. Let cool for 5 minutes before serving with optional tzatziki.

Air Fryer Directions: Prep sweet potatoes with a bit less olive oil and the spices. Bake in your air fryer at 400 degrees F in batches for about 20 to 22 minutes, or until they reach the desired crispness. Shake the basket halfway through the cooking time. About 2 minutes before fries are done, sprinkle with a few more spices and salt and cook for the remaining time. Repeat with the remaining fries.
