You only need six simple ingredients for this crispy fried chicken recipe. These are the ingredients you need to grab from your fridge and pantry: boneless/skinless chicken breasts, flour (all-purpose or gluten-free), garlic powder, onion powder, Parmesan cheese and olive oil. The parsley flakes are optional, but add some color to the chicken. (I love my parsley flakes!)
Cooking Tip: I like to pound my chicken breasts out with my cast iron skillet. Simply put the chicken breasts between two pieces of plastic wrap and pound with the bottom of the skillet. You could also use a meat mallet or buy thin-cut chicken breasts and skip this step.
Serve this crispy, juicy Italian-inspired chicken breasts for dinner with your favorite side dishes. I served mine with fresh broccoli and a salad. These chicken breasts would be delicious served over spaghetti with marinara or alfredo sauce.

Ingredients
- 2 boneless/skinless chicken breasts, pounded to an even thickness
- 1/4 cup flour (all-purpose or gluten-free flour)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 cup Parmesan cheese, finely grated
- parsley flakes (optional)
- 2 tablespoons olive oil, for frying
Here's how to make it:
- Season the chicken breasts with salt and pepper, to taste. (You could use boneless chicken thighs instead of breasts.) Put the flour, garlic powder, onion powder, Parmesan cheese and parsley flakes, if using, onto a plate or into a shallow bowl. (For a gluten-free meal, use gluten-free flour.)
- Heat the olive oil in a large skillet over medium-high heat. Dredge the chicken breasts in the seasoned flour, coating both sides. Place in the hot oil.
- Cook the chicken breasts until golden on the first side, about 4 minutes. Flip the chicken over and continue to cook until cooked through, about 4 to 5 minutes more. Chicken is cooked through at 165 degree F internal temperature on a food thermometer.
- Serve. This recipe can easily be doubled for four servings. Store any leftover chicken in an airtight container in the fridge.
