Creamy Air Fryer Zucchini Recipe: Something Magic Happens In the Air Fryer (3 Ingredients, 15 Minutes) by Donna John

In an episode of Tournament of Champions VII on Food Network, I watched Lorena Garcia defeat Katsuji Tanabe. The unlikely star of Chef Garcia's winning plate was zucchini she had cooked in the air fryer. Using the air fryer was mandatory because of the Randomizer, and no one was happy about it but me.
After hearing the judges, Judy Joo, Rocco DiSpirito and Antonia Lafaso, rave about the zucchini, I hit rewind on the remote to see how she made the zucchini so I could recreate it at home. (Rocco DiSpirito even said he may get an air fryer now just because of the vegetable side dish. He does not like air fryers.)
The judges described the air fried zucchini as "creamy," and they were correct about that. Something magical happens in the air fryer to the zucchini that makes the outside golden and the inside creamy like butter. Delicious! And the zucchini recipe could not be more simple. The low-calorie zucchini is cut into thick slices, coated in olive oil and sprinkled with whatever seasoning you like. Chef Garcia used just salt and black pepper. I chose to use my favorite seasoned salt, Morton Nature's Seasonings. Air fry the zucchini for about 12 to 15 minutes, and the squash is ready to be enjoyed.
Serve the creamy air fryer zucchini as a side dish with anything from chicken to pork to lamb to venison to beef to turkey to seafood. I served mine with Japanese barbecue air fryer chicken thighs (yes, I love my air fryer) and sugar snap peas for a delicious dinner.

Ingredients
- 1 large zucchini, cut into thick rounds
- 1 teaspoon olive oil (more if needed)
- seasoning blend of choice (or salt and black pepper)
Here's how to make it:
- Put the cut zucchini into a bowl. Drizzle with olive oil and sprinkle with your desired seasonings, to taste. Toss to coat the zucchini all over.
- Put the zucchini into a single layer in the air fryer basket. (I like to use an air fryer liner for easy cleanup.)
- Air fry at 400 degrees F for about 12 to 15 minutes, or until the zucchini is golden on the outside and creamy on the inside. (You can shake the basket halfway through cooking, if you'd like.)
- Serve hot. Store any leftover zucchini in an airtight container in the fridge. You can easily double or even triple this recipe.
