Fudgy brownie lovers, this recipe is for you. My husband, who claims to be a brownie connoisseur, says this may be his favorite brownies recipe ever. That's because they're over-the-top fudgy and almost melt in your mouth. For a chocoholic like him, it's pure chocolate bliss! And these decadent brownies are as nutritious as they are delicious, thanks to the secret superfood ingredient: sweet potatoes. You read that right!
Yes, the fudge-like texture of these brownies comes from an unlikely combination of ingredients including sweet potatoes – those high-fiber, nutrient-dense root vegetables that we may only think of during the holiday season. That's about to change, though, since these irresistible brownies deserve to be enjoyed all year long. Sweet potatoes are considered a superfood because they have a staggering amount of nutrients. When using sweet potatoes in recipes, the best part is that they provide natural moisture and sweetness. That's definitely happening in this easy one-bowl brownies recipe. The brownies pack some protein, thanks to the peanut butter (check out the health benefits of peanut butter and the health benefits of protein). They offer the health benefits of cocoa, too. It's also a bonus that the additional sweetener is maple syrup, not granulated sugar. With no flour or eggs, these are brownies you can feel good about.
This high-fiber flourless brownies recipe is so simple and quick – you can whip them up in only about half an hour. Here are the five wholesome ingredients you'll need: sweet potatoes, peanut butter, maple syrup, unsweetened cocoa powder and chocolate chips. The chopped walnuts are optional. You mix up the batter in one bowl then bake them up into fudgy brownie bliss. And we thought the brownies were even better the next day, after they had a chance to set in the refrigerator. Sooo good!
These unforgettable high-protein brownies are the perfect healthier fudgy dessert after dinner, but they're also a delicious no-guilt snack any time of day. Enjoy the sweet potato goodness whenever you like.

Cook Time: 20 minutes (ovens vary)
Total Time: 30 minutes
Servings: 9
Ingredients
- 2 cups cooked sweet potatoes, mashed (I boiled mine then let them cool a bit before mashing)
- 1 cup peanut butter, at room temperature (crunchy or creamy, not the all-natural kind)
- 1/2 cup real maple syrup
- 1/2 cup unsweetened cocoa powder
- 3/4 cup semisweet chocolate chips (or milk chocolate chips or dark chocolate chips)
- 1/2 cup chopped walnuts or pecans (optional)
Here's how to make it:
- In a large mixing bowl, add the mashed sweet potatoes, peanut butter, maple syrup and cocoa powder. Stir to combine. (You could use almond butter instead of peanut butter.)
- Fold in the chocolate chips, and the walnuts, if using. (You could use your favorite chocolate chips in this recipe.)
- Evenly spread the batter into an 8x8-inch baking pan that's been sprayed with cooking spray or lined with parchment paper.
- Bake in a an oven that's been preheated to 350 degrees F until cooked through, about 20 minutes.
- Allow brownies to cool in the pan completely before slicing and serving. Store leftover brownies in an airtight container in the refrigerator. These brownies are even better the next day after they've had a chance to set!
