This easiest peanut butter cookies recipe is plain old-fashioned goodness.
These yummy peanut butter cookies are just like my grandma used to make. Using only four ingredients, these crispy on the outside, chewy on the inside cookies come together in just about 20 minutes. What could be better than that? Plus, these simple cookies include the health benefits of peanut butter and the health benefits of protein in every bite.
These days, we can all use more things to smile about. These low-sodium cookies can help put a smile on just about anyone's face. Here are the wholesome ingredients you'll need to make these high-protein cookies: crunchy or creamy peanut butter, sugar, baking soda and an egg. You mix up the gluten-free cookie dough, form the dough into balls, flatten the balls with a fork then bake the cookies until golden. Very simple and satisfying.

Ingredients
- 1 cup peanut butter (crunchy or creamy peanut butter, not the all-natural kind), at room temperature
- 1/2 cup granulated sugar
- 1 teaspoon baking soda
- 1 large egg
Here's how to make it:
- In a large mixing bowl, add the peanut butter and sugar. Mix well to thoroughly combine. Add the baking soda and egg. Mix to thoroughly combine. (You can use an electric mixer, hand beaters or a sturdy fork. You can use crunchy or creamy peanut butter, but regular peanut butter works better than the all-natural kind.)
- Form dough into balls that are about 1 1/2 inches each and drop them onto baking sheets that have been lined with parchment paper or sprayed with cooking spray.
- Flatten each cookie with a fork, pressing it over the cookie balls in a crisscross pattern. (The number of cookies depends on the size of the balls you form.)
- Bake in an oven that's been preheated 350 degrees F oven until cookies are lightly brown around the edges, about 10 to 12 minutes. Do not over-bake.
- Allow cookies to cool for a few minutes before transferring to a wire rack to cool completely. Store leftover cookies in an airtight container.
