Football season has me wanting to snack and make appetizers. Pigs in a blanket are one of my favorite gameday snacks. With a leftover sheet of puff pastry in the freezer and some smoked sausage in the fridge, I decided to change up our regular pigs in a blanket recipe and make these puff pastry sausage bites. Delish!
You only need three simple ingredients to make a plate full of high-protein smoky goodness to snack on or serve at your family get-together. Here is your short shopping list for this sausage appetizer recipe: puff pastry, mustard and smoked sausage. For some color, you could also grab that jar of parsley flakes or fresh parsley. The puff pastry sausage bites are ready to be devoured in about 30 minutes.
You could add other ingredients to this appetizer like a little grated cheese or hot sauce for some spice. Don't like mustard? Try a dollop of jalapeno jelly or red pepper jelly instead. Yum! Serve these sausage bites for a high-protein snack or appetizer anytime.

Ingredients
- 1 sheet puff pastry, thawed if frozen
- 1/4 cup mustard (whole-grain mustard, Dijon mustard, yellow mustard or your favorite)
- 12 ounces smoked sausage, cut into rounds
- parsley flakes or fresh parsley, chopped (optional)
Here's how to make it:
- Lay the puff pastry sheet out on a flat work surface. Cut into squares with a sharp knife or pizza cutter.
- Push the squares into mini muffin tins. (I did not have mini muffin tins so used regular muffin tins.)
- Spread some mustard on the bottom of each phyllo shell.
- Add a round of sausage to each shell.
- Bake in a preheated 400-degree F oven for about 20 minutes, or until sausage is hot and puff pastry is cooked and golden.
- Sprinkle with parsley flakes before serving, if desired. Serve hot. Store any leftovers in an airtight container and reheat as desired.
