My husband is a meat and potatoes guy, which is fine until you want to add more fish into your diet. When a friend of mine told me she uses mashed potatoes in her salmon patties, my mind started racing on how to create salmon patty that slightly hid the salmon. My creation was this crispy Parmesan potato salmon patties recipe.
To make these quick, easy pan-fried high-protein salmon cakes you need to gather the following ingredients from your pantry and fridge: a can of salmon, mashed potatoes (leftover mashed potatoes or make a batch fresh), an egg, Parmesan cheese, garlic powder, onion powder, flour (all-purpose or gluten-free) and olive oil for frying. This seafood recipe is a wonderful way to use up leftover mashed potatoes.

If you avoid canned salmon because it takes you forever to remove the bones, here’s a tip for you: crush the bones with your fingers when breaking up the salmon. Ingredients
- 14 ounces (1 can) salmon, drained and flaked
- 1 cup mashed potatoes
- 1 egg
- 2 tablespoons Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 cup all-purpose flour or gluten-free flour, for dusting (optional)
- 2 tablespoons olive oil, for frying
Here's how to make it:
- Combine all the ingredients in a mixing bowl. Season with salt and black pepper, to taste. (You could add some chopped green onion or fresh chives, if desired. I added some fresh chives from my herb garden.)
- Shape into patties. (The size and thickness will determine the amount of patties you will get.)
- Dust the patties lightly with flour, if desired. (You can skip this step. But the flour does create a little crust on the outside. For gluten-free patties, use gluten-free flour or none at all.)
- Heat the olive oil in a large skillet over medium heat. When hot, add the salmon patties and fry until golden brown, about 3 minutes. Flip the patties over and continue to cook until heated through, about 2 to 3 minutes more.
- Serve the salmon patties hot. Store any leftovers in an airtight container and reheat in the microwave.
