To make these gluten-free cookies you will need just seven simple ingredients. Here is what to grab from your pantry: old-fashioned rolled oats, ground cinnamon, sea salt, unsweetened applesauce, natural peanut butter, vanilla extract and either honey or maple syrup. The cookies bake up in about 10 minutes.

Ingredients
- 1 1/2 cups old-fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1 cup unsweetened applesauce
- 3/4 cup natural peanut butter
- 2 teaspoons vanilla extract
- 1/4 cup raw honey or pure maple syrup
Here's how to make it:
- In a large bowl, add the oats, cinnamon, salt, applesauce, peanut butter, vanilla and honey. Stir to combine. (For gluten-free cookies, make sure your oats are gluten-free. Check the label.)
- Spoon the mixture evenly into 12 portions onto a parchment paper-lined baking sheet. Slightly flatten and arrange into desired cookie shapes as they will not spread while baking.
- Bake in a preheated 350-degree F oven for 10 to 12 minutes or just until the tops are slightly golden. Allow cookies to cool. Store the cookies in the refrigerator in an airtight container for a week, or frozen for 2 months.
