Mayonnaise is a secret weapon when it comes to baking chicken. Mayo not only adds flavor, but it helps keep the chicken moist because of its fat content. This shortcut recipe for magic Parmesan mayo baked chicken proves that! This baked chicken recipe is juicy, moist and loaded with flavor.
You only need three simple ingredients to make this high-protein recipe. (Check out the health benefits of protein.) Here is your short gluten-free shopping list for this easy dinner recipe: boneless/skinless chicken breasts, mayonnaise and Parmesan cheese. If you want to add even more flavor a flecks of color, you can also grab the optional parsley flakes or Italian seasoning.
The chicken is simply placed in a baking dish and coated with the mayonnaise and Parmesan cheese, which is stirred together. Bake for about 20 minutes (ovens vary) and get ready to slice into a juicy chicken breast with a golden, creamy crust.
The baked chicken breasts are delicious served with a fresh vegetable as a side dish. I served mine with a lentil salad and zucchini.

Ingredients
- 4 boneless/skinless chicken breasts
- 1/4 cup mayonnaise (I used Hellman's Real Mayonnaise)
- 1/4 cup Parmesan cheese, grated
- 1/2 - 1 teaspoon parsley flakes or Italian seasoning (optional)
Here's how to make it:
- Season the chicken on both sides with salt and black pepper. Place into a baking dish. (I drizzled my baking dish with a little olive oil. You could use boneless/skinless chicken thighs instead of breasts.)
- In a small bowl, stir together the mayonnaise, cheese and seasoning, if using.
- Spread the mayo mixture over the top of the chicken breasts, coating completely.
- Bake in a preheated 425-degree F oven until the chicken is cooked through, about 20 minutes. (Cooking time will depend on thickness and size of the chicken breasts and your oven. Chicken is cooked through at 165 degrees F on a food thermometer.)
- Serve. Store any leftover chicken in an airtight container and reheat quickly in the microwave.
