Ingredients
- unrefined organic coconut oil or ghee, for greasing the dish
- 4 large eggs, at room temperature
- 2 cups cottage cheese
- 1/4 cup raw honey or pure maple syrup
- 2 teaspoons vanilla extract
- 1/4 cup arrowroot powder, oat flour or cornstarch
- 1 teaspoon baking powder
- 1 large lemon, zested
- pinch of sea salt
- 2 cups fresh or frozen blueberries
Here's how to make it:
- In a food processor or a blender, add the eggs, cottage cheese, honey and vanilla. Blend by pulsing just until well combined and smooth, but don't over blend.
- In a small bowl, whisk together the oat flour, arrowroot or cornstarch with the baking powder.
- Transfer your egg/cottage cheese mixture to a large mixing bowl and add in the oat flour/baking powder mixture, lemon zest and sea salt. Stir until smooth and combined.
- Transfer the batter to a greased 9x6-inch baking dish, then sprinkle blueberries evenly throughout. Bake in a preheated 350-degree F oven for 30 to 35 minutes, or just until it's set in the center. Allow to cool before slicing. Keep leftovers tightly wrapped in the refrigerator for up to four days.
