Here is your short shopping list for this Mexican appetizer or snack recipe: cottage cheese, taco seasoning (store-bought or homemade taco seasoning) and pepper-jack cheese. The cottage cheese gets whipped into fluffy lightness and then is combined with the grated cheese that you melt together quickly in the microwave. The creamy, cheesy dip is ready to be eaten in about 10 minutes.
Serve this quick and easy high-protein recipe as an appetizer with corn chips, tortilla chips or even fresh vegetables, or as a high-protein snack during the day. You could add some fiber to the dip by stirring in some black beans!

Ingredients
- 1 cup cottage cheese
- 2 tablespoons taco seasoning
- 1/2 cup pepper-jack cheese, shredded
Here's how to make it:
- Add cottage cheese and taco seasoning to a high-speed blender or food processor. Blend for 2 to 3 minutes, or until smooth. (I like the food processor better if you have a choice. For a gluten-free dip, use gluten-free taco seasoning.)
- Scrape the cottage cheese mixture into a microwave-safe bowl and grate the cheese on top. (If you don't like pepper-jack cheese, use your favorite. Cheddar or Monterey Jack would work well, or a Mexican blend.)
- Microwave until the cheese is melted, about 1 to 2 minutes. Make sure to check after 1 minute so as to not overcook. Stir. Top with salsa or cilantro, if desired, and serve with chips. Enjoy! Store the dip in an airtight container in the fridge. Reheat in the microwave.
