These chicken and broccoli poppers are absolutely irresistible. The blend of chicken and vegetables (only seven ingredients in all) makes for a very fun and tasty meal. The patties are so easy to make and are ready in only about 20 minutes! Plus you get the health benefits of broccoli, the health benefits of green onions (also known as scallions) and the health benefits of protein in every bite.
To make these simple high-protein patties, you'll need to gather the following gluten-free ingredients: ground chicken, fresh broccoli, green onions, minced garlic, eggs, feta cheese and olive oil for frying. The chicken and broccoli mixture is rolled into poppers then pan-fried in olive oil until golden brown. So easy! Plus, learn why feta may be the healthiest cheese in the world.

Ingredients
- 2 1/2 cups broccoli, diced
- 1 pound ground chicken (or turkey)
- 4 green onions (scallions), chopped
- 1 teaspoon minced garlic
- 2 medium eggs
- 4 ounces feta cheese, crumbled
- 1 1/2 tablespoons olive oil, for frying
- salt and black pepper, to taste, if desired (optional, but I used about 1/3 teaspoon of each)
Here's how to make it:
- In a large microwave-safe bowl, add the broccoli and cover it with a damp paper towel. To steam the broccoli, microwave it until crisp-tender (about 4 minutes).
- While the broccoli is steaming, prepare the chicken mixture. In a large mixing bowl, add the ground chicken, scallions, minced garlic, eggs and feta cheese. Season with salt and pepper, to taste, if desired. Stir to combine.
- After the broccoli is done steaming, add it to the chicken mixture and stir to combine.
- Form the mixture into patties and place them into a skillet that's been drizzled with olive oil over medium heat. (The number of patties you make depends upon the size of patties you form.)
- Fry the poppers until cooked through and golden (about 4 to 5 minutes on each side). Chicken is done when it reaches 165 degrees F on a meat thermometer.
- Remove to a plate that's been lined with paper towels then serve.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave or skillet.
