Make-your-own taco bar is a great, fun dinner idea for families with picky eaters and different tastes. Kids love making choices, and are more likely to select some healthy options (like lettuce or avocado) when they are making their food decisions themselves. This is a fun and healthy dinner option for everyone. For Meatless Monday, try out vegetarian tacos. You can use taco seasoning and the following to make a filling:

  • tofu 
  • potatoes
  • vegetarian "meat"
  • chopped vegetables

My little carnivores don't even notice the difference. Meatless Monday is a great way to keep your family – and the earth – healthy. And, it saves money, too!
