Carolina Gold sauce is the barbecue sauce most often used in South Carolina. The sauce, sometimes called 24K sauce, is thought to have originated with the French and German immigrants who came to South Carolina in the 18th century. Some think the Germans needed something to dip their sausages in, which sounds about right to me. Who doesn't love sausage and mustard?
Being from Texas and eating Texas-style barbecue sauces most often (tomato based), I was intrigued by this thick, golden mustard-based sauce. While I would never compare it to Texas BBQ sauces, it is delicious and complements barbecued, smoked and baked meats with its tanginess and sweetness.
To make this no-cook barbecue sauce recipe you will need yellow mustard, honey, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt and black pepper. Simply whisk the ingredients together and it is ready to go. No cooking involved, though some Carolina Gold sauce recipes do boil the ingredients for a few minutes. I saw no point in that.
Use this Carolina Gold sauce as a glaze for chicken (chicken wings!), pork or beef or as a dipping sauce for chicken nuggets, onion rings, tater tots, french fries or whatever you like to dip and dunk. The sauce is also delicious with smoked sausage for dinner or as an appetizer. I drizzled barbecue baked chicken with the tangy sauce and it was delicious.
