It tastes like it's from your favorite Mexican restaurant, but you can make it in the comfort of your own home! Not only does this burrito bowl recipe taste great, it's also very easy to make because the slow cooker does most of the work.
This gluten-free slow cooker chicken burrito bowl recipe is made with nutritious ingredients that you can feel good about. Here's what you need to make this Mexican-inspired chicken dinner: ground chicken, onion, extra virgin olive oil, onion powder, chili powder, garlic powder, ground turmeric, chicken broth, tomatoes, black beans, corn and plain Greek yogurt. Using your slow cooker, this hearty dinner is ready in only about four hours.
Serve this delicious dinner with your favorite burrito bowl toppings. We served it over rice, with fresh chopped avocado and tortilla chips. So easy and delicious!

Ingredients
- 1 pound ground chicken, crumbled
- 1 small yellow onion (about 3/4 cup), diced
- 4 medium tomatoes (about 2 cups), diced
- 1 1/2 cups chicken broth
- 2 tablespoons extra virgin olive oil
- 2 teaspoons onion powder
- 2 teaspoons chili powder
- 2 teaspoons garlic powder
- 1 teaspoon ground turmeric
- 1 small green pepper (about 3/4 cup), diced
- 15 ounces (1 can) black beans, drained and rinsed
- 15 ounces (1 can) whole kernel sweet corn, drained and rinsed
- 1/2 cup low-fat plain Greek yogurt
Optional Toppings
- avocado, chopped
- tomatoes, diced
- tortilla chips
- sour cream
- salsa
- cheddar cheese, shredded
Here's how to make it:
- Place the chicken (crumbled), onion, tomatoes, chicken broth, olive oil and seasonings into the slow cooker. Season with sea salt and freshly ground black pepper, to taste, if desired. Stir to combine. Cook on high for about 3 hours. (Try this chicken recipe with boneless/skinless chicken breast. To reduce sodium, use low-sodium chicken broth. Instead of fresh tomatoes, you could use canned tomatoes (drained).)
- Add the green pepper, black beans and corn into the slow cooker. Let cook an additional 1 hour on high.
- Add in the Greek yogurt and stir to combine.
- Serve on its own or over rice, and top with your favorite burrito bowl toppings, if desired. Store leftovers in an airtight container in the refrigerator or freezer.
