My last farmers market trip resulted in some beautiful okra. I grew up eating okra, but it was either my grandma's okra in tomatoes, onions and bacon, crispy fried okra, pickled okra in a jar or okra in gumbo. All delicious, but now I enjoy finding new okra recipes. This simple baked okra is now a new favorite. The simple vegetable recipe can be a side dish, snack, appetizer or add-in for grain salads and lettuce salads.
All you need to make this crispy okra is fresh okra (check out the health benefits of okra), some spices and olive oil. Here is what you need to grab from your spice rack: smoked paprika, garlic powder, onion powder, garam masala, salt and black pepper. The okra is sliced, sprinkled with the seasonings and drizzled with the olive oil. Bake for about 15 minutes and get ready to resist eating it straight from the baking sheet.
Pro Tip: If you have small, young okra, you can leave the stems on. If your okra is larger, cut the tougher stems off.
Serve the okra as a side dish with dinner alongside chicken (fried chicken!), pork, lamb, seafood or your favorite dinners. Pop them straight into your mouth for a healthy snack or serve them with a dipping sauce as an appetizer. This new way to cook okra will be expanded on with different spices next time.

Ingredients
- 1 pound okra, sliced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garam masala
Here's how to make it:
- Put the sliced okra onto a baking sheet or into a baking dish. (For easier cleanup, line the baking sheet with aluminum foil or parchment paper.)
- Sprinkle with the seasonings and drizzle with the olive oil. Season with salt and pepper, to taste. Toss to coat. (Try different spices like turmeric, curry powder, Mediterranean seasoning, Italian seasoning or your favorite spice blend.)
- Bake in a preheated 450-degree F oven for about 15 minutes or until okra is browned and tender, stirring once. Store any leftover okra in an airtight container to add to grain salads, lettuce salads or even pasta dishes. This recipe can easily be cut in half for two servings.
