Crispy & Creamy Baked Italian Yukon Gold Potato Recipe: Yes, Please

Potatoes are always a welcome side dish in my house. We love mashed potatoes, potato salad, boiled potatoes with herbs, smashed potatoes, criss-cross potatoes... We love all the potatoes! My favorite kind of potato to cook are Yukon gold, which are sometimes called butter gold. They are so buttery and are super creamy. I also like that they're smaller potatoes and not too starchy.

I found a new Italian seasoning salt that I love, which inspired this baked Italian potato recipe. This potato side dish is a winner! The potatoes have just a few ingredients and minimal prep. Melt enough butter to cover the bottom of a casserole dish or baking pan. Sprinkle the melted butter liberally with the dried Italian seasoning. If your Italian seasoning does not contain salt, sprinkle with some sea salt and black pepper. Put the potatoes cut side down into the pan and bake until creamy on the inside and golden and crispy on the bottom.

Serve these crispy, creamy roasted potatoes with chicken, beef, pork, lamb or your favorite protein. I served mine with a grilled steak, asparagus and sautéed chestnut mushrooms (recipe coming soon!).

Ingredients

  • small to medium Yukon gold or butter gold potatoes, cut in half
  • butter (I used clarified butter)
  • dried Italian seasoning or Tuscan seasoning with sea salt (I use S.A.L.T. Sisters Tuscan Farmhouse Spice Blend)
  • grated Parmesan cheese (optional)

Here's how to make it:

  1. Melt enough butter to cover the bottom of a baking dish. Sprinkle Italian seasoning to cover the bottom. Be generous!
  2. Put the potatoes cut side down into the pan.
  3. Brush the tops with some of the butter and seasoning. If your seasoning does not contain salt, sprinkle with some sea salt and black pepper. Bake in a preheated 350-degree F oven for about 40 minutes or until cooked through and golden on the bottom.
  4. Remove from the oven and flip the potatoes over.
  5. Serve if not using Parmesan cheese.
  6. If using grated Parmesan cheese, sprinkle the potatoes with the cheese and return to the oven for a few minutes to melt the cheese.
