Cabbage, carrot and green onion are cooked until crisp-tender in a skillet. The vegetables are poured into a shallow baking dish. A mixture of milk, an egg and Swiss cheese is poured over the top. Sprinkle some Parmesan on top before baking it in the oven for about 30 minutes. The result is a creamy, colorful cabbage side dish recipe that fits into your low-carb lifestyle.

Ingredients
- 2 cups shredded cabbage
- 1/2 cup grated carrot
- 1/4 cup chopped green onions
- 1 egg
- 1/2 cup milk
- 1/4 cup shredded Swiss cheese
- 2 tablespoons grated Parmesan cheese
Here's how to make it:
- Cook the cabbage, carrot and green onions in a nonstick skillet until crisp-tender, about 5 minutes.
- Pour the vegetables into a lightly greased shallow 1-quart baking dish.
- In a bowl, stir together the egg, milk and Swiss cheese. Season with salt and pepper. (If you don't like Swiss cheese, try gruyere, white cheddar, yellow cheddar, Monterey Jack or your favorite cheese.)
- Pour the mixture over the cabbage. Sprinkle with the Parmesan cheese.
- Bake in a preheated 350-degree F oven for about 30 minutes. The recipe makes two servings, but could easily be doubled for a family. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
