The batter is a combination of both flours, old-fashioned oats, brown sugar, baking powder, eggs, milk, oil and vanilla. The batter is baked for about 15 minutes. Ingredients
- 1 cup old-fashioned oats
- 1 cup whole-wheat flour
- 1/2 cup all-purpose flour
- 3/4 cup brown sugar, packed
- 2 teaspoons baking powder
- big pinch of salt
- 2 eggs
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 1/2 teaspoons vanilla

- You can use all all-purpose flour if preferred.
- Store the muffins in an airtight container to keep them fresh.
Here's how to make it:
- Whisk together the oats, both flours, brown sugar, baking powder and salt.
- In another bowl, stir together the eggs, milk, oil and vanilla.
- Stir the wet ingredients into the dry ingredients until just moistened.
- Fill greased or lined muffin tin cups about 2/3 full with the batter. Bake in a preheated 400-degree F oven for about 15 to 17 minutes.
