Creamy Slow-Cooker Mexican Black Bean Soup Recipe Is Nutritious & Delicious by 30Seconds Food

Healthy black beans are loaded with fiber, protein and other vitamins and essential minerals. If you want to add this nutritious bean to your diet, but aren't sure how, try this easy black bean soup recipe.
This creamy, comforting bean soup recipe is made with onion, sweet red bell pepper, garlic, chipotles in adobo sauce, ground cumin, black beans, broth and lime juice. The soup has minimal prep (just chopping the vegetables and juicing the lime) and can be cooked in a slow cooker or on the stove. To cook the soup on the stovetop, simply simmer the ingredients for about 2 1/2 hours or until the beans are tender, then puree and add the lime juice.
Garnish this black bean soup with pico de gallo or chopped green onions. If you need some meat in the soup, add cooked chicken, sausage, seasoned ground beef or chorizo. The soup is even better the next day for lunch or dinner, and can be frozen.

Ingredients
- 1 tablespoon olive oil
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 4 cloves garlic, minced
- 2 teaspoons chopped canned chipotle chiles in adobo sauce
- 2 tablespoons ground cumin
- 16 ounces dry black beans
- 42 ounces (3 cans) chicken broth or vegetable broth
- 2 tablespoons lime juice
Recipe Notes
- For a vegan soup, use vegetable broth instead of chicken broth.
- For even more flavor, you could add some chili powder.
- If you don't have an immersion blender, put the soup in batches into a regular blender. Be careful putting hot liquids in your blender!
Here's how to make it:
- Heat the olive oil in a pan over medium heat. Add the onions and bell pepper. Cook about 5 minutes or until soft. Add the garlic, chipotles and ground cumin. Cook, stirring, about 30 seconds.
- Put the mixture into a slow cooker. Add the beans and broth. Cover and cook on high heat for about 5 to 6 hours or until beans are tender.
- Using a immersion blender, blend the soup until smooth or to your desired consistency. Stir in the lime juice and season with salt and pepper.
