We love cake mix cookie recipes. And we especially love creative cake mix cookie recipes like this potato chip cookie! The combination of salty (potato chips) and sweet white or dark chocolate or butterscotch chips is a classic combination.
The moist cookie recipe is made with a box of white cake mix, butter, brown sugar, eggs, crushed plain potato chips and your choice of baking chips. You can use butterscotch chips, semisweet chocolate chips or white chocolate chips. Combine all the ingredients in a mixing bowl (yes, this is a one-bowl recipe!). Stir together and drop by tablespoons full onto parchment paper-lined baking sheets. Bake in the oven for about nine to 12 minutes. Don't overbake for the moistest cookies!
This sweet and salty potato chip cookie recipe makes 4 dozen "tiny" cookies using a tablespoon or 1 dozen large cookies. If you make the tiny cookies, be sure to adjust the baking time and watch them close so you don't overcook them. Store these potato chip cookies in an airtight container for snacking or serve for dessert.

- 15 ounces (1 box) white cake mix
- 1/2 cup (1 stick) butter, softened
- 1/4 cup brown sugar
- 2 large eggs
- 2 cups crushed plain potato chips
- 1 cup butterscotch chips, semisweet chocolate chips or white chocolate chips
Recipe Notes
- For best results, do not overbake the cookies.
- To soften the butter, take it out of the fridge at least 30 minutes before beginning the recipe.
- You can make larger cookies, but you will get less cookies from the dough.
- Store the cookies in an airtight container to keep them fresh.

- In a large bowl combine the cake mix, eggs, butter and sugar. Stir in crushed potato chips and butterscotch chips.
- Drop the dough by tablespoonfuls 2 inches apart onto greased or parchment paper-lined baking sheets.
- Bake in a preheated 350-degree F oven for about 9 to 12 minutes or until set and light brown on the bottom.
