Cookbooks are a slight obsession of mine. I have a lot! Lately I've been reading through some of my older cookbooks and picking recipes out of them to make. My latest is this soy ginger marinated flank steak recipe fromKeith Famie's Adventures in Cooking.
"This recipe was created for use with an inexpensive cut of meat commonly known as flank steak or London broil," writes Chef Famie in his cookbook. "The marinade tenderizes the meat and gives it an Asian flavor. An important technique to remember for serving the meat is to slice it thinly on the bias, thus ensuring tenderness."
To make this tender and juicy flank steak recipe you will need a flank steak, soy sauce, fresh ginger, orange marmalade, fresh garlic, a lemon, an orange and olive oil. This high-protein dinner cooks up in about 10 minutes. (Learn about the health benefits of protein.)

Ingredients
- 1 pound flank steak
Marinade
- 1 cup soy sauce
- 1 teaspoon grated fresh ginger
- 2 tablespoons orange marmalade
- 1 clove garlic, minced
- 1 lemon, juiced
- 1 orange, juiced
- 1/2 cup olive oil
Here's how to make it:
- Whisk together all the marinade ingredients. Marinate the steak in the mixture for 1 hour, turning a few times. (You can use low-sodium soy sauce to reduce the sodium in this recipe. I used frozen ginger cubes instead of fresh ginger.)
- Grill the flank steak to medium rare (or your desired doneness) on a preheated outdoor grill or indoor grill. (If you don't have a grill, you can cook the steak in a skillet.)
- Let the steak rest for a few minutes before slicing it against the grain.
