Here is your shopping list: ground beef, onion, taco seasoning, cabbage (read about the health benefits of cabbage), carrots, a can of beef broth and two cans of diced tomatoes. You can also grab some cilantro and sour cream, for serving, if you feel so inclined.

- 1 - 1 1/2 pounds ground beef or ground turkey
- 1 onion, chopped
- 1 ounce (1 packet) taco seasoning
- 1 head cabbage, chopped
- 1 carrot, chopped
- 14 ounces (1 can) beef broth
- 28 ounces (2 cans) diced tomatoes
- 3 cups water
- chopped cilantro, for garnish (optional)
- sour cream, for serving (optional)
Here's how to make it:
- Cook the ground beef and onion in a large soup pot until meat is browned and onion is soft, about 5 minutes
- Add the remaining ingredients, bring to a boil, reduce heat and cook gently for about 45 minutes. Season with salt and pepper. Store the soup in an airtight container in the fridge. The tasty cabbage soup recipe reheats beautifully in the microwave or in a saucepot on the stove.
