Can't get enough carrots? Make this easy air fryer roasted carrots recipe and you will have a new favorite way to cook carrots. I know it's my favorite way now. The crisp-tender carrots are absolutely delicious and come out perfectly roasted and flavorful. No mushy carrots here!
Short and sweet shopping list for this air fryer recipe: carrots, granulated sugar, garlic salt and butter. The garlic salt and sugar are stirred into melted butter, then tossed with the carrots. Air fry for about 15 minutes and they're good to go.
This carrot recipe can be made in an air fryer with a basket or tray. (I used an Emeril Lagasse 360 Air Fryer Oven.) Try this cooking method with other root vegetables, too. Serve these air-fried carrots as a side dish with fish, shrimp, chicken, turkey, pork, beef or whatever you enjoy for dinner.

- 6 medium carrots
- 1/2 teaspoon granulated sugar
- 1 teaspoon garlic salt (I used Morton Garlic Sea Salt)
- 2 tablespoons butter

- Carrots don't need to be peeled. If you're not peeling them, scrub them under water before cutting.
Here's how to make it:
- Cut the carrots, peeled or unpeeled, diagonally into chunks. (I did not peel mine.) Put them into a bowl.
- In a small bowl, combine the sugar, garlic salt and butter. Melt in the microwave. Stir to combine.
- Pour the butter over the carrots. Toss to coat the carrots.
- Cover the air fryer basket or tray with aluminum foil. Pour the carrots onto the foil.
- Air fry the carrots at 390 degrees F for 15 minutes.
