Easy Chicken Vegetable Stir-Fry Recipe: This Tangy Stir-Fry Pasta Is Topped With Flavorful Feta by Elisa Schmitz

Ingredients
- 1 box (16 ounces) of your favorite pasta (I used rotini)
- 2 chicken breasts, diced
- 2 ripe tomatoes, diced
- 1 large red, yellow or green pepper, diced
- 1 zucchini, diced
- 2 cups carrots, diced
- 1 broccoli crown, diced
- juice of 1 lime
- 3 tablespoons olive oil
- 3 tablespoons apple cider vinegar
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 3 ounces feta cheese, diced
Here’s how to make it:
Cook pasta according to package directions. While pasta is cooking, add lime juice, olive oil, apple cider vinegar, garlic and soy sauce to a large sauté pan or wok. Add chicken, carrots and broccoli and stir fry for 5 minutes or until chicken is mostly cooked. Add peppers, zucchini and tomatoes. Stir fry 5 more minutes or until chicken is cooked through and vegetables are crisp-tender.
Serve over pasta. Top with diced feta cheese.
