Ingredients
- 1 teaspoon olive oil
- 1 onion, chopped
- 3 ribs celery, chopped
- 2 cloves garlic, minced
- 4 cups (2 cans) chicken broth
- 4 cups water
- 16 ounces dried split peas, washed
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1 ham bone from leftover ham
- 2 large carrots, chopped
- 2 cups leftover cooked ham
Recipe Notes
- Store the soup for up to four days in the refrigerator.
- Some people like to top split pea soup with a little sour cream, heavy cream or crunchy croutons. Try it!
Here's how to make it:
- Heat the olive oil in a dutch oven. Add the onion and celery and cook until soft, about 3 to 4 minutes. Add the garlic and cook 30 seconds.
- Add the chicken broth, water, split peas, bay leaves and thyme. Season with salt and pepper.
- Put the ham bone into the pot. Bring to a boil, reduce heat and simmer about 1 hour or until peas are tender.
- Remove the ham bone from the soup. Add the carrots and chopped ham. Cook about 30 more minutes or until carrots are tender.
