This 20-Minute Rice Noodle Recipe With Ground Pork & Garlic Chives Will Transport You to Asian Town by Donna John

You know those noodles you can get in Asian markets and restaurants? This easy noodle and ground pork recipe comes pretty close. If you can't find garlic chives, use regular chives and add some chopped garlic. Green onion tops will work in a pinch.

Ingredients
- 8 ounces Chinese bean thread noodles or rice noodles
- 1 teaspoon cornstarch
- 1 cup chicken broth
- 1/4 cup soy sauce
- 1 tablespoon mirin
- 1 - 2 teaspoons sambal oelek
- 1 teaspoon sesame oil
- 1 cup chopped fresh garlic chives or regular chives
- 1 hot chile, chopped
- 1 teaspoon minced fresh ginger
- 1 tablespoon cooking oil
- 1 pound ground pork
Here's how to make it:
Put the noodles into a bowl of cold water. Set aside.
Combine the cornstarch, chicken broth, soy sauce, mirin, sambal oelek and sesame oil. Stir until cornstarch is completely dissolved.
Heat the oil in a large skillet or wok over high heat. Add the chives, chopped chile and ginger. Cook about 30 seconds. Add the pork and cook until cooked through, breaking it up into small pieces.
Drain the noodles. Add the sauce to the pan and bring to a boil. Add the noodles and cook, stirring, until the noodles are tender, about 5-6 minutes.
Garnish with more chopped chives or green onion tops and chiles, if desired.
