To make this easy no-mayo potato salad recipe, you only need six gluten-free ingredients. Here is your short shopping list for this side dish recipe: small Yukon gold or white potatoes (check out the health benefits of potatoes), Dijon mustard, lemons for juicing and zesting, red wine or white wine vinegar, olive oil and your favorite fresh herbs.

Ingredients
- 2 pounds small Yukon gold or white potatoes
- 1 tablespoon Dijon mustard
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar or white wine vinegar
- 1/3 cup olive oil
- 1/4 cup fresh parsley, fresh mint or fresh dill (or a combination)
Here's how to make it:
- Boil the potatoes in salted water until tender, about 15 to 20 minutes. Potatoes are cooked through when they pierce easily with a sharp knife. Drain and return to the pot to cool. When cool enough to handle, cut the potatoes in half.
- In a bowl, stir together the Dijon mustard, lemon zest, lemon juice, vinegar and olive oil. Season with salt and black pepper, to taste.
- Stir the dressing into the potatoes along with the fresh herbs. Serve at room temperature or refrigerate until ready to serve. Store the potato salad in an airtight container in the fridge.
