Have leftover quinoa or just want it ready to go when you are? I cooked up a package of quinoa and froze it in containers. When you’re ready to eat, just grab it and defrost in the microwave for 1 to 2 minutes. Here's one way I love to use it:
- Add mixed frozen veggies or veggies from the fridge into the quinoa.
- Or use fresh vegetables. Try diced cucumber, tomato, pepper, mushroom or radish.
- I add a quick dressing of oil, a drop of lemon juice, salt and pepper.
It’s a great side dish for supper or a grab-and-go meal! Even kids like it!
