Eating lunch at my grandma and grandpa's house is a memory I cherish. My grandma did not make simple lunches like sandwiches or salads – she cooked full-blown dinners. When she fried chicken, fried shrimp or made any protein, she would have a vegetable or two as a side dish. My favorites were her broccoli with cheese sauce and cauliflower with cheese sauce. This cheesy mashed cauliflower recipe took me back to sitting at their kitchen table in one bite.
Parmesan and some sort of milk or cream were my standard ingredients for mashed cauliflower. Not having either in the fridge, I improvised and used a Velveeta sauce cheese packet and a little butter. Oh, my. So delicious! This budget recipe cooked up in no time and is one that will be saved in my recipe binder.
To make this shortcut cauliflower recipe you only need three ingredients. I kind of already gave them away, but here is your short shopping list for this gluten-free recipe: fresh cauliflower (check out the health benefits of cauliflower), Velveeta cheese sauce and butter.
Kids will even love this low-carb cheesy mashed cauliflower because it has a macaroni and cheese flavor thanks to the cheese sauce. Serve the creamy cauliflower as a side dish with your favorite dinners. I served mine with crispy pan-fried chicken breasts and a salad.

Ingredients
- 1 head cauliflower, cut into florets
- 4 ounces (1 package) Velveeta cheese sauce
- 1 - 2 tablespoons butter
Here's how to make it:
- Boil the cauliflower florets until very tender, about 8 to 10 minutes.
- Drain well then return to the pot. Mash with a potato masher. Cook, over low heat and stirring often, until any remaining water evaporates from the cauliflower. Depending on how well you drained it, this could take 2 to 5 minutes.
- Add the Velveeta cheese packet and butter.
- Stir over low heat until cheese and butter melts and is thoroughly combined. Season with salt and black pepper, to taste.
- Serve.
- Store any leftover cauliflower in an airtight container in the fridge. Reheat in the microwave.
