A whole pork butt roast cooked in an air fryer? Needless to say, this foodie was skeptical. But I was intrigued and had a pork butt in the freezer, so had to try it. Guess what? This air fryer pork butt recipe worked! The pork butt cooks in about one hour or less, and comes out of the air fryer with a golden, crispy crust and is tender and juicy on the inside. Plus, air frying is healthy!
All you need to make this air fryer recipe is a pork butt that's about 2 to 3 pounds and a spice blend. You don't want a pork butt that's too big or it won't fit into the air fryer basket. Mine was about 2 1/2 pounds. Rub the pork roast with a dry spice blend (or just plain ol' salt and black pepper) and cook until the pork reaches 145 degrees F internal temperature. So easy!
Cooking Tip: If you think your pork is getting too dark, you can turn it occasionally during the cooking time.
Be sure to let the air fried pork butt rest before either slicing or shredding it. Serve the pork butt for dinner with your favorite side dishes. You could even use it for pork sandwiches. The pork butt is a wonderful meal-prep recipe you can use in so many different ways. Some of my pork butt ended up in fried rice.

Ingredients
- 1 pork butt roast (2 to 3 pounds)
- dry spice blend of choice (or salt and black pepper)
- olive oil (optional)
Here's how to make it:
- Season the pork butt all over liberally with a spice blend. (I used an ancho taco seasoning, but use your favorite seasoning blend. You could use just salt and black pepper.) Put the pork butt into the air fryer basket. Drizzle with a little olive oil, if desired. (I like to use an air fryer liner on the bottom of the basket for easier cleanup.)
- Air fry at 350 degrees F for about 25 minutes per pound, or until pork is cooked through. Pork is cooked through at 145 degrees F internal temperature on a food thermometer. (I inserted a thermometer into the middle of the pork butt before cooking. I use the MEATER thermometer, but there are lots of good remote thermometers available.)
- Remove the pork butt once cooked through to a serving plate or platter. Let the it rest for at least 5 minutes.
- Slice or shred the meat. Serve as desired. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
