There isn't a photo of these air fryer roasted tomatoes on my dinner plate because they literally did not make it to the dinner table. I ate all of them straight out of the air fryer basket. Thank goodness my husband won't eat tomatoes (no guilt). This really is the best air fryer recipe for roasted tomatoes and will be made all the time now at my house. The recipe is so easy, healthy and low in calories, so it's really not a problem!
All you need to make these juicy, flavorful tomatoes is some spices, olive oil and fresh tomatoes. Here is your short, wholesome, gluten-free shopping list: fresh tomatoes (Roma, Campari, on-the-vine tomatoes and even cherry tomatoes would work), olive oil, Italian seasoning, garlic powder, sea salt and black pepper. While I was raiding the air fryer basket and devouring the freshly cooked tomatoes, I was also texting with my youngest daughter. After sending her a photo of the tomatoes, she said to eat them with burrata. My reply was how delicious they would be on a sandwich (especially an Italian sandwich), in a grain bowl or pasta salad, or stirred into pasta. (Roasted tomato burrata pasta? I see a new recipe in the works.) That night they were supposed to be a side dish with chicken, but turned into a healthy appetizer or snack. Lucky me.

Ingredients
- fresh tomatoes
- olive oil
- Italian seasoning
- garlic powder
- sea salt
- black pepper
Here's how to make it:
- Cut the tomatoes into slices. Do not cut them too thin. Set the tomatoes on a paper towel so some of their moisture can be absorbed.
- Put the tomatoes in a single layer in the air fryer basket. (I like to use an air fryer liner.)
- Season the tomatoes to your taste with Italian seasoning, garlic powder, sea salt and black pepper. Drizzle with olive oil. (Instead of Italian seasoning you could use dried basil, dried oregano, parsley flakes, Greek seasoning, Mediterranean seasoning, Cajun seasoning or your favorite.)
- Air fry at 375 degrees F for about 10 minutes, or until the tomatoes tender. (You could cook the tomatoes longer if you want them more charred and less juicy.)
- Serve immediately or refrigerate until ready to use.
