On my last trip to Costco, I could not resist a three-pack of Boursin cheese (two garlic and fine herbs and one shallot and chive). What I wanted to make with one of them was that viral baked pasta recipe with cherry tomatoes. However, my husband is not a fan of tomatoes, so I had a dilemma. After checking my produce drawer in the fridge and discovering some beautiful fresh broccoli, I decided to try a twist to that viral recipe. And guess what? I like my version with broccoli better than the original!
If you're never bought this creamy cheese, here's the scoop. Boursin is a spreadable cheese made with garlic, parsley and chives that was created in 1963 by the French cheesemaker François Boursin. This cheese was inspired by fromage frais, a traditional French dish that blends garlic, fresh cream, soft cheese, herbs, salt and pepper. Boursin cheese adds creamy texture and delicious flavor to a variety of recipes. You need to try it!
To make this simple high-protein baked pasta recipe you will need just six ingredients. Here is your shopping list: a box of Boursin cheese (whatever variety you like), fresh broccoli (check out the health benefits of broccoli), fresh garlic, olive oil, pasta (a short pasta works best) and Parmesan cheese.

Ingredients
- 5.2 ounces (1 box) Boursin cheese (I used garlic and herb)
- 2 - 3 cups fresh broccoli florets
- 4 cloves garlic, minced
- 1 teaspoon olive oil
- 8 ounces short pasta (rotini, penne, fusilli, cavatappi, rigatoni, bowties, etc.)
- 1/3 cup Parmesan cheese, grated
Here's how to make it:
- Put the Boursin cheese in the middle of a baking dish. (I used my round Le Creuset baking dish. You could easily double this recipe and cook it in a 13x9-inch baking dish.) Scatter the broccoli around the cheese. Top with the minced garlic. Drizzle with the olive oil. Season with salt and black pepper. (For some spice, sprinkle on some crushed red pepper flakes.)
- Bake in a preheated 375-degree F oven for 30 minutes, or until the cheese is melted and the broccoli has just start to char on the tips and is crisp-tender.
- While the cheese and broccoli bakes, cook the pasta according to package directions for al dente. Drain and reserve 1/3 cup of the pasta water.
- Add the cooked pasta and Parmesan cheese to the broccoli and cheese.
- Stir. Add pasta water until it becomes your desired creaminess.
- Serve immediately. Store the pasta in an airtight container in the fridge and reheat in the microwave. You can add a little milk to loosen it up when reheating.
