Quick and easy dinner recipes have been on my radar lately. So have comfort food recipes. This creamy voodoo pasta recipe hits on both notes. This flavorful Cajun pasta only has six ingredients and is on the table in about 20 minutes.
You don't need any voodoo wizardry to make this easy high-protein pasta recipe. Here is your short shopping list for this shortcut recipe: rotini pasta (or your favorite pasta), sausage (chicken, pork, andouille or smoked sausage work well, but use your favorite), a bell pepper (I used a combination of red and green), an onion, Cajun seasoning and a jar of alfredo sauce. You can also add cooked chicken if you have it, hot sauce for a little heat and fresh parsley. (Check out the health benefits of protein.)
This Cajun-inspired pasta is a satisfying dinner served with your favorite side dishes. I served the shortcut pasta with a side of garlic green beans. This budget recipe makes a lot, so I froze some for a quick dinner later. Now that's being a dinner wizard!
Cuisine: American
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 8
Ingredients
- 16 ounces rotini pasta
- 12 - 16 ounces sausage (pork, chicken, andouille or smoked sausage), sliced
- 1 bell pepper (red, green, orange, yellow or a combination), sliced
- 1 small onion, sliced
- 1 teaspoon Cajun seasoning (or to taste)
- 15 ounces (1 jar) alfredo sauce
Optional Ingredients
- 1 - 2 cups chopped cooked chicken (I used the meat from leftover chicken wings)
- 1 teaspoon hot sauce
- chopped fresh parsley
Here's how to make it:
- Cook the pasta according to package directions for al dente. Drain and set aside. (You can use whatever type of short pasta you like.)
- While the pasta cooks, cook the sausage in a large skillet until it begins to lightly brown, about 3 to 5 minutes. (If adding chicken, add it during the last minutes of cooking. If adding chicken, you may want to reduce the amount of sausage you add.) Remove to a plate.
- Add the peppers and onion. Cook, stirring often, until they soften, about 3 minutes.
- Add the Cajun seasoning and parsley (if using). Cook, stirring, for 1 minute. (All Cajun seasonings have different levels of heat. Be sure to find one that suits your tastes.)
- Add the sausage back to the skillet.
- Pour in the alfredo sauce. Add the hot sauce, if using. Stir to combine.
- Stir in the drained pasta. Cook about 1 minute, stirring.
- Serve the pasta with your desired side dishes. Store any leftovers in an airtight container in the fridge and reheat in the microwave. The pasta freezes well for quick dinners later.
