Cucumber salads are a favorite at my house. I've made all sorts of cucumber salad recipes, from creamy Italian cucumber salad (one of my favorites!) to grandma's cucumber salad to Mediterranean cucumber salad. This loaded cucumber salad recipe is a bit different – it's the first one I've made with bacon in it. This creamy cucumber salad has all the flavors of a loaded baked potato without the carbs. Score!
To make this fresh vegetable salad recipe you will need just six simple ingredients. Here is your short shopping list: fresh cucumber (check out the health benefits of cucumber), cheddar cheese, bacon, ranch dressing, fresh dill (or your favorite herb) and green onions (check out the health benefits of green onions).

Cucumbers have a lot of moisture in them. If you want to remove some of that moisture before adding them to the salad, simply lay the slices on a paper towel and cover with another paper towel on top. Gently press down and watch the moisture soak into the paper towel.
This loaded cucumber salad is wonderful as a side dish with chicken, pork, beef, seafood or lamb. This refreshing salad would be a wonderful addition to any summer cookout or potluck.

Ingredients
- 2 cups sliced cucumber (I used half of a seedless cucumber)
- 1/2 cup grated cheddar cheese
- 1/3 cup crumbled crisp bacon
- 1/3 - 1/2 cup ranch dressing (I used Salata Buttermilk Ranch)
- 1 tablespoon chopped fresh dill (or your favorite herb)
- 2 - 3 green onions, chopped
Here's how to make it:
- Combine all the ingredients in a bowl. (I sliced my cucumber with a knife but you could use a mandoline food slicer. Instead of cheddar cheese, try gouda, gruyere, Monterey Jack, pepper-jack or your favorite cheese. Instead of green onion, you could use red onion.)
- Season with black pepper, if desired. Gently stir to combine.
- Serve immediately or refrigerate until ready to serve. Store the salad in an airtight container in the fridge.
