Baked chicken is one of my favorite dinners. There are so many ways to bake chicken, especially using a bottle of salad dressing. I've made honey-mustard baked chicken, green goddess baked chicken, ranch baked chicken, creamy Italian baked chicken, the always-trending french baked chicken and Elisa recently made thousand island baked chicken. This melt-in-your-mouth Caesar baked chicken recipe will join the list of winner winner chicken dinners.
You only need six simple ingredients for this Italian-inspired chicken recipe. Here is your short shopping list: boneless chicken breast with the skin still on, Caesar salad dressing, Parmesan cheese, garlic powder, onion powder, dried Italian seasoning and optional parsley flakes for a little color. All the ingredients are rubbed under the skin and all over the outside of the chicken before being baked to juicy, golden perfection. The salad dressing mixture forms a flavorful, crunchy layer on the chicken that is absolutely delicious.
If you don't have or like skin on your boneless chicken breasts, do not scroll past this baked chicken recipe. You can still make it with skinless chicken breasts. I decided to cut the breasts from bone-in chicken breasts, so the skin was not already removed. This is a budget way to get boneless chicken breasts (bone-in split chicken breasts are a lot less expensive).

Ingredients
- 2 boneless chicken breasts (with skin)
- 1/2 cup Caesar salad dressing
- 1/2 cup shredded Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Italian seasoning
- parsley flakes (optional)
Here's how to make it:
- Combine the salad dressing, cheese, garlic powder, onion powder and Italian seasoning in a small bowl. Season with black pepper, if desired.
- Gently life up the skin on the breasts. Spread some of the salad dressing mixture under the skin. Place the skin back on the chicken. Put the chicken into a baking pan. If you chicken breasts do not have skin, no worries. Simply skip this step.
- Spread the remaining mixture over the outside of the chicken. Season with more black pepper and sprinkle with parsley flakes, if desired.
- Bake the chicken in a preheated 375-degree F oven for about 25 to 30 minutes, or until cooked through (165 degrees F internal temperature on a food thermometer). Cooking time may vary due to the size of the chicken breasts and your oven.
- Serve the chicken with your favorite side dishes. Store any leftovers in an airtight container in the fridge. This recipe can easily be doubled to feed four.
