Green beans have always been one of my favorite vegetables. But face it, green beans can be boring. I'm always on the hunt for interesting green bean recipes, or get creative and invent my own. This roasted Parmesan mayonnaise green bean recipe is flavorful, crisp and creamy. This roasted vegetable recipe is definitely not boring!
The green beans are put into a baking dish and then spread with a creamy, spiced mayonnaise-based mixture, and then sprinkled with panko. Bake for about 15 minutes and you have a green bean side dish recipe you'll want to make again and again for dinner.

The spices flavor the mayo while the fresh lemon juice cuts the richness of the mayo and adds a bit of tartness. Perfection. Serve these crisp and creamy green beans as a side dish with your favorite dinners. I served mine with skillet pan-fried pork chops and macaroni and cheese. Delish!

Ingredients
- 1 pound green beans, ends trimmed
- 2 tablespoons mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground mustard
- 1/4 teaspoon smoked paprika
- 1 teaspoon lemon juice
- 1 tablespoon panko
Here's how to make it:
- Put the green beans into a layer (you can stack, if needed) in a baking dish.
- Put the mayonnaise, cheese, garlic powder, onion powder, ground mustard, smoked paprika, salt and pepper, to taste, and lemon juice into a small bowl. (Because Parmesan cheese is salty, I used very little extra salt.)
- Stir to combine.
- Spread the mixture on top of the green beans.
- Sprinkle with the panko. (For a gluten-free recipe, do not use the panko or use gluten-free panko breadcrumbs.)
- Bake in a preheated 375-degree F oven for about 15 minutes. The green beans are crisp-tender at the end of baking time. If you like softer green beans, boil them for a minute or two before adding them to the baking dish.
- Serve. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
