Recipe Notes
- After baking, try to keep the pepper halves level so that when you crack the egg, it doesn’t run out.
- Add spices like garlic or red pepper for extra flavor.
- Diced onion is another good addition.
- Use any kind of cheese you like.
Here’s how to make it:
- Cut bell peppers in half and remove the ribs and seeds.
- Place the peppers on a greased baking sheet, cut side up. Drizzle with olive oil and sprinkle with half of the salt and pepper. In a preheated 400-degree F oven, bake the peppers for 15 minutes. They will start to brown around the edges.
- Remove the baking sheet from the oven and carefully crack 1 egg into each pepper half. Keep the halves as level as possible so the egg doesn’t spill onto the pan.
- Season with the remaining salt and pepper and then top with a sprinkle of cheese.
- Bake until the egg whites are set, about 15 minutes. Sprinkle with cilantro, if desired.
