This easy Thai yellow curry crab recipe uses my yellow curry sauce and is so simple to prepare. The dish my look fancy, but it's easy enough for a weeknight meal.

To make this yellow curry crab you will need fresh crabs, celery, onion, green onions, Thai bird chiles, fresh garlic, light cream, water, eggs, chili oil, yellow coconut curry sauce and cooking oil. This flavorful Asian-inspired seafood dinner is on the table in about 30 minutes.

Ingredients

  • 2 crabs of your choice
  • 50g celery, chopped (about 1/2 cup)
  • 50g onion, chopped (about 1/2 cup)
  • 3 green onions, chopped
  • 3 Thai bird chilies, sliced
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 80g (2.8 ounces) Yai’s Thai Yellow Coconut Curry Paste
  • 2 ounces light cream
  • 2 ounces water
  • 3 eggs, beaten
  • 3 tablespoons chili oil
  • cooking oil, as needed

  • If you can' find Yai's Thai yellow coconut curry paste use your favorite curry paste.
  • This recipe could easily be doubled.

Here's how to make it: 

  1. Section the crabs and chop all veggies. Set aside.
  2. Whisk curry paste, cream, eggs and chili oil in a bowl to create curry mixture.
  3. Heat cooking oil in a pan. Fry crab, garlic, ginger and part of the green onions until crab turns red.
  4. Add water and simmer for 3 minutes.
  5. Put celery, onion and chilies into the pan.
  6. Stir in curry mixture and cook until aromatic.
  7. Dish out with a garnish of green onions, accompanied by jasmine rice.
