Peach cobbler is my all-time favorite dessert. Growing up, if peach cobbler was on the menu, I ordered it. There was even a restaurant that had peach cobbler on Sundays, so often we'd have lunch there so I could indulge. My mom and grandma had a recipe for out-of-season peach cobbler that they both made. While this recipe is delicious, it's made with canned peaches. Not complaining, because I've eaten my weight in it over the years. But there's just something about a peach cobbler in the summer made with fresh, juicy peaches.

This easy peach cobbler recipe is not only easy and super tasty, but it's made in the slow cooker. So while you're visiting with company or doing your thing, it's cooking and becoming insanely delicious – without you. For this slow-cooked peach cobbler recipe you'll need the following ingredients: fresh peaches, orange juice, cornstarch, cinnamon, nutmeg, ginger, brown sugar, whole-wheat flour, all-purpose flour, baking powder, salt, butter, milk and granulated sugar. Ingredients

• 8 medium peaches, peeled and sliced (about 7 cups)
• 2 tablespoons orange juice
• 2 tablespoons cornstarch
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon ground ginger
• 1/4 teaspoon ground nutmeg
• 3/4 cup packed brown sugar (divided)
• 1/2 cup whole wheat flour
• 1/2 cup all-purpose flour
• 2 teaspoons baking powder
• large pinch of salt
• 1/4 cup cold unsalted butter, cut into cubes
• 1/3 cup whole milk
• 1 tablespoon granulated sugar

Here's how to make it: 

1. Stir together the peaches, orange juice, cornstarch, cinnamon, ginger and 1/4 cup brown sugar in a mixing bowl. Pour into a 6-quart slow cooker that's been sprayed with nonstick cooking spray. (Try substituting peach nectar for the orange juice for even more peach flavor.)
2. In another mixing bowl, whisk together the flours, baking powder, salt and remaining 1/2 cup brown sugar. Add the cold, cubed butter. Use a pastry cutter or your fingers to cut it into the flour until it resembles coarse crumbs. Stir in the milk. (You can substitute 1 cup of whole-wheat pastry flour for the all-purpose flour and the whole-wheat flour, or use all all-purpose flour.) Drop mounds of the batter over the peaches. Sprinkle with the 1 tablespoon granulated sugar. 
3. Cover and cook on high for about 2 to 3 hours or until the top is golden and the edges are cooked. (To help absorb extra moisture, you can put paper towels under the slow cooker lid.) Let the cobbler rest about 15 minutes before serving. Store the cobbler in an airtight container in the fridge and reheat in the microwave.
