Panko-Crusted Baked Salmon Recipe: A Fabulous Fish Dinner in 20 Minutes Seafood Dinner

We've read comments that some people are tired of salmon, but we find that hard to believe because of the popularity of all our salmon recipes. We think salmon is here to stay! Salmon is healthy, cooks quickly and can be prepared in so many different ways. This panko-crusted baked salmon recipe is moist and juicy on the inside, with a crunchy topping loaded with different flavors on the outside. 

The simple salmon recipe has just a few ingredients: salmon, honey mustard, fresh thyme, panko breadcrumbs, olive oil, fresh flat-leaf parsley and smoked paprika. The honey mustard is mixed with a little thyme and spread on the salmon fillets. The panko is combined with more thyme, olive oil, parsley and smoked paprika, and piled on the salmon. Bake the fish for about 12 to 15 minutes and you're ready to sit down to a delicious dinner.

You could use dried thyme if you can't find fresh. If you don't have honey mustard, any mustard can be substituted. Just keep in mind that it will affect the flavor. Dijon, for example, would add a twang from the wine and a spicy brown mustard would add a bit of heat. Serve this baked fish with a fresh salad and whatever side dishes you enjoy.

Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons honey mustard 
  • 2 teaspoons chopped fresh thyme (divided)
  • 2/3 cup panko 
  • 4 teaspoons olive oil
  • 2 tablespoons chopped flat-leaf Italian parsley
  • 1/2 teaspoon smoked paprika

Here's how to make it: 

  1. Stir together the honey mustard and half of the thyme. In another bowl, stir together the panko, remaining thyme, olive oil, parsley and smoked paprika. 
  2. Season the salmon with salt and black pepper. Put them onto a greased baking sheet, skin side down. Spread the honey mustard mixture on top of the salmon, then sprinkle with the panko mixture. 
  3. Bake the salmon in a preheated 400-degree F oven for 12 to 15 minutes or until fish flakes easily.
