Whoever said one mustn't play with one's food was clearly misinformed. After all, there's no finer way to spend the day than by being creative, and mealtimes should be no exception. This alphabet soup recipe offers the ideal opportunity to ask a dining mate "Who are you?" using an excessive quantity of vowels, of course.

This easy alphabet pasta soup recipe from Alice in Wonderland: The Official Cookbook, is loaded with flavor and easy to make. The ingredients are simple: vegetable broth, dried porcini mushrooms, olive oil, butter, onion, garlic, thyme, water and alphabet pasta. This kid-friendly soup recipe can easily be adapted to gluten-free diets if made with gluten-free pasta and vegan if made with a vegan butter instead of real butter.

Ingredients

  • 2 cups vegetable broth
  • 1 ounce dried porcini mushrooms
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1 yellow onion, minced
  • 2 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon dry thyme
  • freshly ground black pepper
  • 3 cups water
  • 1 cup (about 7 ounces) alphabet pasta

Here's how to make it: 

  1. In a small saucepan or microwave-safe measuring cup, heat the vegetable broth until very hot, about 2 minutes. Remove from heat, add the dried porcini mushrooms and let soak for at least 10 minutes.
  2. In a small stockpot over medium-high heat, add the olive oil and butter. When the butter begins to foam, add the minced onions and garlic. Sauté, stirring frequently, until the onions are very soft and beginning to caramelize, 10 to 15 minutes.
  3. Place a strainer over the stockpot and pour in the broth. Squeeze the mushrooms as dry as possible by pressing them against the strainer, then mince the mushrooms and add them to the pot along with the salt, thyme and black pepper (to taste). Simmer over medium heat for 10 to 15 minutes, to allow the flavors to meld.
  4. Add the water to the pot and bring the soup to a boil. Add the pasta and boil for 9 to 11 minutes or until the pasta is the desired tenderness. Serve immediately.
