Australian Oysters Kilpatrick Recipe: An Oyster Recipe From Down Under Seafood Appetizers

Oysters Kilpatrick is a popular way in Australia to cook oysters. The oysters are covered with a flavorful sauce made of Worcestershire sauce, vinegar, butter and hot sauce, then sprinkled with bacon and broiled. Some people do vary the ingredients, like using tomato sauce or barbecue sauce. This oyster recipe is often served on Christmas Day and Good Friday.

This quick and easy oyster recipe is perfect as a first coarse or served as an appetizer. Be sure to buy oysters from a reputable source and keep them on ice until ready to cook.

Ingredients

  • 2 tablespoons Worcestershire sauce
  • 1/4 cup balsamic vinegar
  • 2 tablespoons butter
  • 1/4 teaspoon Tabasco sauce (or your favorite hot sauce)
  • 2 slices bacon, cooked crisp and crumbled (or to desired doneness)
  • 12 - 24 oysters, shucked

Here's how to make it: 

  1. Heat the Worcestershire sauce, vinegar, butter and hot sauce in a saucepot. Remove from the heat. Set aside. 
  2. Cover a baking sheet with crumpled aluminum foil (will serve as a bed to steady the oyster shells). (You could also use an oyster pan.) Set the shucked oysters on the foil. Spoon some sauce over each oyster. Sprinkle with the crumbled bacon. 
  3. Broil the oysters for about 1 minute. Serve immediately.
