The potato salad gets its smokiness from smoked paprika, its creaminess from mayonnaise and its protein punch from hardboiled eggs. So delicious!
You only need eight simple ingredients to make a batch of this smoky potato salad for dinner tonight. Here are the gluten-free ingredients to grab from your fridge and pantry: Yukon gold potatoes (check out the health benefits of potatoes), hardboiled eggs (read about the health benefits of eggs), mayonnaise, yellow mustard, apple cider vinegar, smoked paprika, celery and onion.
Cooking Tip: You could use red, white or even russet for this high-protein potato salad recipe. I prefer Yukon gold because of their creaminess and buttery flavor.
This creamy potato salad is delicious as a side dish with pork, chicken, beef, lamb, turkey, venison or seafood.

Ingredients
- 2 pounds Yukon gold potatoes
- 5 hardboiled eggs, peeled
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons smoked paprika
- 1/4 cup celery, chopped
- 1/4 cup onion, chopped
Here's how to make it:
- Boil the potatoes until tender, about 15 to 20 minutes. Drain and set aside.
- Stir together the mayonnaise, mustard, apple cider vinegar and smoked paprika in a large bowl. Season with salt and pepper, to taste. (You can add more mayonnaise to create your desired creaminess.)
- Add the celery and onion. Stir.
- Grate the egg into the bowl. Stir to combine.
- Cut the potatoes in half or in small pieces if large. Put the potatoes into the bowl.
- Stir to combine. Taste and add more salt, pepper or other flavorings if needed.
- Serve at room temperature or chill until ready to serve. Sprinkle with more smoked paprika, if desired. (I desired and added a lot of smoked paprika to the top.) Store the potato salad in an airtight container in the fridge.
